Heat oven to 170 °C. Peel and dice potatoes and boil in a pot of well-salted water, until done (15 mins). Drain potatoes, put in a food processor, and blend.

Place blended potatoes in a bowl, add grated Cheddar and cornflake crumbs*. Mix and knead the mixture with your bare hands. Form little balls (2–2.5 cm diameter each). Coat each ball in sesame seeds and place onto a baking sheet covered with baking paper. Put sheet in oven and bake for 12–15 mins at 160–170 °C, until golden and crispy.
TIP
Serve with meats or as a snack with a dip made of sour cream, lime juice, and a pinch of salt.
*Add more crumbs according to the potato type you use, especially if the dough falls apart or seems too watery.
