Grab a large bowl. Mix buckwheat and spelt flour, eggs, milk, and a pinch of salt. Stir and leave aside for 10 mins for the ingredients to blend.

In the meantime, make the filling.

Wash, core, and cube apples.

Grab a nonstick pan and heat 2 tablespoons of butter. Add sliced apples and fry for 5 mins over medium heat.

Turn the heat off, add honey and cinnamon. Stir.

Heat another skillet. Pour the batter with a ladle and fry pancakes for 1 min from each side over medium heat. You should get approximately 10 pancakes.

Fill the pancakes with fried stewed apples, roll up and serve.
