Heat oven to 160 °C.

Separate egg yolks and whites in two bowls. Add a pinch of salt to whites and whip them until stiff peaks.

Take the second bowl, add cream cheese to yolks, and whip until thick. Mix bowls together and stir. Cover a baking sheet with baking paper. With a stirring spoon, pour small portions of batter onto sheet and create flat cakes. Bake for 25–30 mins at 150–160 °C. Leave to cool down after baking.

Top each piece of cloud bread with a blob of basil pesto, some ham and mozzarella, tomato and avocado slices, and lamb’s lettuce. Cover with another piece of bread and serve.
TIP
Cloud bread pairs well with literally any topping. Our favorite sweet option is cream cheese and homemade jam.
