Finely grate courgette. Add a pinch of salt and leave on a sieve to drain. If still wet, wring it and place it in a bowl.

Mix with milk, eggs, and oats. Stir until blended.

Grab a skillet and heat olive oil. Pour the batter onto the skillet and fry the pancakes for 2 mins on each side on medium heat. Use the entire batter while fresh.

Serve hot.
