Place couscous and raisins in a large bowl. Pour with 600 ml of boiling water. Stir and cover. Leave for 5 mins for the water to absorb.

Peel clementines, divide them into pieces and halve each piece.

When the couscous is done, add coconut oil, honey, cinnamon, orange juice, clementines, and crushed pistachios.

Sprinkle each serving with flaked almonds and pomegranate seeds.
