Pour 150 ml of soya milk into a bowl. Add egg yolks, vanilla extract, honey, and starch.

Stir thoroughly until all starch lumps dissolve.

Pour remaining soya milk into a small pot. Bring to boil on medium heat.

Pour boiling milk into pudding mixture and stir until mixture thickens.

In a non-stick frying pan, heat coconut oil, add oats, and roast on low heat for about 5 mins. until they turn golden. Add cinnamon.

Layer the pudding, roasted oats, and washed berries into 4 serving glasses. If you are not going to serve pudding immediately, add oats directly before serving.

Store in fridge for up to 3 days.

TIP
If you make too many roasted cinnamon oats, add them to your morning yoghurt.
