In a large bowl, mix milk, coconut oil, honey, yeast, and pinch of salt. Set aside for about 10 mins.
Whip a bit and add flour and vanilla extract. Then sprinkle a board with 50 g of flour, place the dough and knead to come together. After kneading, roll out the dough into a rectangle.
In a separate bowl, mix the ingredients for the filling: honey, cinnamon and coconut oil. Spread the filling evenly on the rolled-out dough, then tightly roll it up. Cut it into rolls and arrange in a round cake tin or pie dish lined with baking paper.
Cover with a clean tea towel and let rise in a warm place for about 1 hour.
Meanwhile, preheat the oven to 180 °C.
When the rolls have risen, remove the tea towel and bake in the preheated oven for 15–20 mins at 170–180°C.
Serve warm or cold.
