Ingredients
- 2× carrot (larger)
- 2× medium-sized banana
- 2× medium-sized apple
- 250 g quick oats
- 4 tablespoons Dutch processed cocoa powder
- 3 tablespoons maple syrup
- 2 tablespoons coconut oil (solid)
- 2 teaspoons baking powder
- 100 ml water
- 10 g coconut oil (for greasing the tin)
- shredded coconut (for dusting the tin)

Heat oven to 180 °C.
Peel and finely grate carrots. Squeeze out extra juice.
Peel bananas. Cut apples and remove cores. Blend in a food processor.
Blend oats. Now, mix all ingredients for the cake.
Cover a round baking tin (25-cm diameter) with baking paper. Grease sides with coconut oil and dust with shredded coconut.
Pour batter into tin.
Place tin in preheated oven and bake for 45 mins at 180 °C. Check with skewer too see if done. If skewer is wet and covered with the batter when removed, bake for an extra couple mins.
Meanwhile, make the coating. Peel bananas, blend, and mix with cocoa powder.
Let cake cool and then spread the frosting.
