Pour shredded coconut, honey, and coconut milk into a bowl. Mix well.
Place bowl in freezer for 20 mins so it stiffens.
Meanwhile, break chocolate into small pieces. Make a double boiler to melt the chocolate down: take 2 pots, or a pot and a bowl (preferably stainless steel or glass). The bottom of the smaller pot or bowl must not touch the bottom of the larger pot. Pour some water in the larger pot. (Its surface should not touch the bottom of the smaller pot). Bring water to a simmer. Now, turn heat down to medium, place the smaller pot or bowl in the larger one and place broken chocolate. Melt chocolate down in double boiler, stirring. Takes approximately 3 mins.
Remove coconut mixture from freezer. Form into small balls, dip in melted chocolate, and place onto a plate. Should produce about 15 balls.
Place for 10 mins in a freezer.
Serve the balls chilled. Store them in a freezer (they will last a few months) or in a fridge (maximum 1 week).
