Preheat the oven to 170 °C and cover a baking sheet with baking paper.

Grab a bowl and mix oats, spelt flour, shredded coconut, and baking powder.

Now, add wet ingredients: melted coconut oil, honey, and vanilla extract. Stir and knead with your bare hands.

Form the dough into 12 balls. Place them onto the sheet and press with a bottom of a glass or with your palm.

Place the sheet in the oven and bake at 170 °C for 12 mins.

Leave to cool down and serve.
