Peel and finely chop the onion.

Heat 2 tablespoons of olive oil in a large pot. Pour chopped onion and stir-fry for 5 mins.

Add pressed garlic and fry for another min.

Pour vegetable stock and broccoli florets. Cook for 10–15 mins on medium heat.

When done, season with salt and pepper. Put aside.

Crack an egg into the soup and blend with a hand blender.

If the soup is too thick, water it down.
TIP
Serve with homemade wholewheat croutons.
