Pour buckwheat groats into a pot and fill it with water in 1:1.5 ratio. Add some salt, bring to a boil, and cook for 2–3 mins on medium heat. Cover the pot and leave for 30 mins.

Heat a tablespoon of olive oil in a large skillet. Add chopped shallot and stir-fry it for 5–7 mins over medium heat.

Add diced tempeh and fry for 1 min over medium heat.

Add sliced carrot and stir-fry for 5 more mins.

Season with caraway, salt, and pepper. Mix with the groats and serve while still warm.

Sprinkle with chopped fresh parsley before serving.
