Roughly grate tofu and carrot and mix them together in a large bowl.

Add eggs, spelt flour, dried basil, curry powder, salt, and pepper. Stir well to get smooth, runny batter.

Grab a large skillet and heat olive oil. With a spoon or ladle, form small patties from the batter, right in the skillet. If your skillet is large enough, you should be able to fry 4 patties in one round. Fry for 2–4 mins from each side. The batter should be enough for approximately 16 patties.

Serve while still hot.

TIP
Best with a blob of natural yoghurt and a side salad.
