Peel and finely chop onion. Chop tomato. Dice mozzarella.

Finely dice chicken breast. Season the meat with salt, pepper, and thyme. Stir.

Heat olive oil in a skillet and add the meat and onion. Stir-fry for 7–10 mins over medium heat. Add chopped tomato and put the tin aside.

Spread mozzarella cubes, chicken breast, onion, and tomato over one half of a tortilla and over with another half.

Toast the tortilla in a cleaned skillet over medium heat for 2 mins from each side.

Do the same with the other tortilla and serve.
TIP
Serve with sour cream and a side salad.
