Put minced meat, oats, thyme, salt, and pepper into large bowl. Use hands to mix ingredients thoroughly. Scoop and roll mixture into 1-tablespoon balls.

Now, take a deep frying pan and heat 1 tbsp olive oil. Toss chopped shallots and stir-fry for 5 mins on low heat. Put shallots aside.

Pour another tablespoon olive oil onto pan. Turn heat to medium. Place meatballs carefully onto pan and fry 20–25 mins. Turn meatballs with a spoon occasionally so evenly fried.

After 20 mins, add fried shallots, pour stock and season with curry powder. Cover skillet, turn heat to low and cook another 10 mins.

Add coconut milk, boil another 2 mins and put the pan aside. If sauce feels too thick, remove meatballs, put sauce in a food processor, and blend.

Season with salt and pepper.

Serve with rice or whole pasta.
