Heat oven to 180 °C.

Peel potatoes and carrots. Wash mushrooms. Slice thinly.

Heat a teaspoon of olive oil, add mushrooms and stir-fry for 5 mins on medium heat. Put aside.

Add ricotta, soya milk, salt, and pepper. Mix with pressed garlic, sliced potatoes, and carrots. Stir well.

Move the mixture to a baking dish and bake for 45 mins at 170–180 °C.

TIP
Serve topped with fresh chopped parsley.
