Grab two sheets of baking paper. Put spinach leaves and sliced mushrooms onto bottom sheet.

Cover spinach and slice mushrooms with salmon fillets, season with salt and pepper, spread with chilli powder, and drip with olive oil.

Cover with upper sheet and roll the paper, forming a pocket.

Place onto a baking sheet and put in oven.

Bake for 15 mins at 165–175 °C.

Serve with rice, roast potatoes, or wholemeal bread.
