Preheat oven to 185 °C.
Peel and dice potatoes into smaller cubes.
Prepare a pot of boiling water, add diced potatoes, cover with a lid and cook over a low heat until tender (this will take approximately 15 mins).
Meanwhile, cut salmon into smaller pieces and finely chop spring onions.
Once cooked, remove the potatoes from heat, drain them and mash in a bowl with a fork. Add salmon, spring onions, 1 tbsp Dijon mustard, 2 tbsp olive oil, salt and pepper. Mix well.
Cover a baking sheet with baking paper. Grab a small bowl and fill it with sesame seeds. Using your hands, form 8 patties out of the mixture in the bowl. Coat each patty in sesame seeds and then place it on the baking sheet.
Put the baking sheet in the preheated oven and bake the patties for 25–30 mins at 170–180°C.
When done, remove from the oven and serve with lemon slices.
