Peel and dice sweet potatoes. Dice pepper and tomato.

Peel and cut onions into wedges.

Grab a large skillet. Heat oil and fry the sweet potatoes for approximately 12 mins.

Add diced tomato, pepper, and onions. Stir-fry for 3 mins.

Add sliced bresaola and fry for 2 more mins.

Add spinach. Turn off the heat and leave for a few mins for the spinach leaves to wither.

Season with salt and pepper. Serve.
