Ingredients
- 250 g tuna in brine
- 2× eggs
- 100 g quick oats
- 1 teaspoon curry powder
- 2 tablespoons olive oil
- 1× spring onion (finely chopped)
- 4× wholewheat burger bun
- 4 tablespoons sour cream (approx. 60 g)
- 2 handfuls fresh salad greens of choice (such as arugula)
- 2× smaller tomato (sliced)
- 1× medium-sized avocado (sliced)

Grab a bowl and mix tuna, eggs, oats, curry powder, and olive oil.
Add chopped spring onion, salt, and pepper. Stir well.
Form 4 same-sized burgers.
Heat a nonstick frying pan and fry the burgers over medium heat for 4–5 mins from each side. Alternatively, use a panini maker and grill the burgers for 4–5 mins from each side.
Heat another skillet. Cut the buns in half and toast them cut side down over medium heat.
Smear the bottom half with a blob of sour cream and add a layer of salad greens and sliced tomatoes. Then, place a tuna burger and a quarter of avocado. Smear the upper half of the bun with the remaining sour cream. Cover the burgers.
