Grab a pot, pour water, add salt, and boil.

Cook pasta for 10–12 mins over medium heat.

When the pasta is done, make the sauce. In a large, deep skillet heat ricotta with 1 ladle of pasta water, rosemary, salt, pepper, and grated parmesan.

Strain the pasta, mix it with the sauce, and stir well.

Top with grated lemon zest and serve.
