Instructions
Grab a large bowl and a sieve. Sift the spelt flour and baking powder. Stir well with your bare hands.
Add salt, solid coconut oil, and water. Knead the dough for 5 mins with your bare hands. The dough should be thick and smooth.
Place the dough onto a pastry board or a kitchen counter.
The dough is sticky and won’t get off your hands? Apply some sunflower oil onto your palms and the working space. Knead for 4 more mins. The oil will absorb into the dough, so if it gets too sticky again, use some more oil.
Place the dough back into the bowl. Cover with a clean kitchen towel and put aside for 10 mins.
Form approximately 16 balls. They should fit into your palm.
Dust the working space with the remaining flour and shape each ball into a tortilla with a rolling pin.
Bake the tortillas on a large skillet (no oil!) on low heat, for 3 mins from each side. Turn around when little air bubbles emerge on the surface and bake for 2–3 more mins.
