Heat oven to 200 °C.

Finely chop olives and sun-dried tomatoes. Mix with all remaining ingredients in a large bowl.

Knead dough and divide into 8 equal portions.

Flour the board with 50 g of spelt flour and roll each portion into round pita (about 1 cm thick) with a rolling pin.

Cover a baking sheet with baking paper and place pitas onto it. Bake for 15 mins. at 190–200 °C.

Serve pitas with hummus (check the one from our website). *Buckwheat flour is rich in potassium, calcium, iron, and zinc. It helps with body detoxification and heals stomach ulcers.
