Wash cauliflower and grate it roughly.

Heat 2 tablespoons olive oil and stir-fry chopped shallot on medium heat. Add grated cauliflower and ground ginger. Stir-fry.

Pour water and coconut milk. Stew for 10–12 mins until the cauliflower is done.

Put aside and blend with a hand blender or food processor. Season with salt and pepper.
