Pulses are super healthy but cooking them lasts ages. Red lentil is an exception: It cooks quickly and doesn’t need to be blended in a food processor. This vegan red lentil soup with carrots and tomatoes will be ready in two shakes.

Grab a skillet, pour olive oil, and fry chopped onion. Add chopped carrots and fry for 5 more mins.

Add pressed garlic and stir-fry for 2 more mins.

Pour canned tomatoes, tomato purée, and vegetable stock.

Heat to a boil. Add red lentils and dried thyme.

Cook until the lentils are soft. It should take approximately 25 mins.

Season with salt and pepper.

If you like spicy food, add a pinch of chilli powder.
