Heat oven to 180 °C. Cover a baking sheet with baking paper.

Wrap bell peppers in aluminum foil. Place them onto the sheet and bake for 25–30 mins at 180–190 °C.

Leave to cool down, then halve and remove the cores. Place the peppers in a food processor, add all remaining ingredients, and blend until smooth.
TIP
Top with roughly chopped walnuts. Serve with whole pita bread.
